- 40g neutral oil
- ½ teaspoon alkaline water

Method

Mix golden syrup, oil and alkaline water, then fold in flour; rest 45 minutes.

Divide lotus paste into balls and wrap each in a thin layer of dough.

Press into a floured mooncake mould and release onto a lined tray.

Bake at 180°C for 6 minutes, brush lightly with egg yolk, then bake 10–12 minutes more.

Cool and rest in an airtight box for two days before eating.
