  • 100g sugar
  • 7g instant yeast
  • ½ teaspoon nutmeg

Method

    Whisk flour, sugar, yeast and nutmeg in a large bowl.

    Add warm water gradually and beat until the batter is smooth and stretchy.

    Cover and leave in a warm place for 45 minutes, until doubled and bubbly.

    Heat oil to 170°C and carefully drop in rounded spoonfuls of batter.

    Fry for 4–5 minutes, turning until evenly golden; drain and serve warm.

Wet the spoon between scoops so the batter slides cleanly into the oil.
