  • 200g pitted dates
  • 200ml boiling water
  • 180g self-raising flour
  • 150g brown sugar

Make it step by step

Method

    Heat the oven to 180°C and soak chopped dates in boiling water for 10 minutes.

    Cream 60g butter with 100g sugar, beat in eggs, then fold in flour and dates.

    Bake in a greased dish for 30–35 minutes.

    Simmer remaining butter and sugar with cream for 5 minutes.

    Pour some sauce over the hot sponge and serve the rest alongside.

Blend half the soaked dates for an especially moist sponge.
